Roasted Garlic & Herb Pork Tenderloin

Roasted pork tenderloin is a delicious cook once, eat twice dinner.

I never bought pork tenderloin, because I always thought it was expensive. However, I took advantage of a buy one, get one free sale and now I’m in love with that cut of pork. Now I always stock up when I find that sale

Pork tenderloin is delicious when roasted. One package has two tenderloins, so I roast them both at the same time and we have enough leftovers for at least another meal. Scroll down for my favorite way to use the leftovers.

Roasted Garlic & Herb Pork Tenderloin

Ingredients:
2 lbs pork tenderloin
5 garlic cloves
1 tablespoon fresh rosemary
1 tablespoon fresh thyme
1 tablespoon fresh basil
1 tablespoon fresh parsley
1 tablespoon fresh oregano
3 – 4 tablespoons olive oil

Instructions:
1. Preheat oven to 425 degrees.

2. In a mini food processor, puree the garlic, herbs and olive oil into a paste.

3. Rub the herb paste all over the tenderloins. Place tenderloins on a roasted pan.

4. Place in oven and roast 20-25 minutes or until cooked through.

Additional Ideas: Serve with mango peach, tomato, or apple salsa.

Cook once, eat twice: Make tacos with the leftover pork for the next day’s lunch or dinner. YUM!!

    Can you believe I’ve never made anything with pork tenderloin? I sometimes have seen it for cheap but have never been sure how to make it….maybe because my mom never bought it? I don’t know, but I’m going to pin this recipe and when I see it next time I’ll buy it and make it this way!

      My mom never bought it either. But a friend served it when she had us over for dinner and I was hooked.
