I was asked recently to sample and prepare a recipe using Knorr Italian Sides. I’m always looking for quick and easy meal ideas and my family hasn’t met a pasta recipe that they didn’t enjoy, so I jumped at the chance.

Spinach & Artichoke Chicken Knorr Italian Sides Pasta 4

There are 3 flavors to choose from: 4 Cheese Pasta, Scampi and Creamy Garlic Shells.

My kids devoured the 4 Cheese Pasta for lunch, but I used the Scampi to make the Spinach & Artichoke Chicken.

Spinach & Artichoke Chicken with Creamy Pasta

Ingredients:

  • 1 package Knorr Italian Sides – any flavor
  • 1 box (10 oz) frozen chopped spinach, thawed and squeezed dry
  • 1 can (13.75) artichoke hearts, coarsely chopped
  • 1/2 cup sour cream
  • 1 lb. boneless, skinless chicken breasts, grilled and sliced
  • 1 cup shredded cheddar cheese

Instructions:

  1. Prepare Knorr Italian Sides according to package directions. Stir in the spinach and artichokes during the last 2 minutes of cook time. Stir in the sour cream.
  2. Arrange pasta on a serving platter and top with the hot grilled chicken and cheese.

I followed the recipe provided completely and it was so simple to prepare. The next time I make it, I’ll use a 6 oz bag of fresh spinach instead of the frozen spinach, and Parmesan cheese in place of the cheddar. That’s the beauty of the Knorr Italian Sides, they can easily be adapted to reflect your family’s tastes and preferences and they transform a side dish into a one dish meal.

    That looks yummy! My kids love spinach and artichokes. Well, the older two do. The youngest only eats Cheerios, pasta and rice!
