What We Ate This Week 01.16.15

This Week’s Dinner:

Saturday: Both of my kids were not feeling well and not very hungry, so thankfully we had enough leftovers from the previous week. I didn’t mind the break from cooking.

Sunday: Parmesan chicken tenders, roasted potatoes, broccoli.

I coated the tenders with flour, shredded Parmesan, and seasonings. Drizzled with melted butter and baked in the oven.

Monday: Leftover Red & White Chicken Chili that was in the freezer. I made it about a month ago and we didn’t finish the leftovers, so I stored in the freezer.

I served the chili with homemade artisan bread and homemade sugar-free applesauce.

Tuesday:  Pineapple Orange Chicken. The recipe was on the back of a Minute brown rice box. I forgot to buy the sweet & sour sauce that the recipe called for, so I Googled it and made my own sauce. My husband and I liked the dish, the girls–not so much.

Wednesday: We stopped by a local sub shop and picked up sandwiches and fries. We don’t normally do this in the middle of the week, but my oldest daughter has had a fantastic week at school and with her attitude so it was a special mid-week surprise treat.

We’re heading into the tween years folks, it gonna be quite a ride.

Thursday: Slow Cooker Sausage & Lentil Stew. We topped with avocado & shredded cheese and tortilla chips.

I served with my homemade sugar-free applesauce.

Friday: Tonight, I’m grilling Red Pepper & Feta Turkey Burgers, baking homemade oven fries and steaming broccoli.

Two of the dinners this week were from my freezer cooking session in November. It is so nice to have dinner already prepped in the freezer.

This Week’s Breakfasts, Lunches & Snacks

We love cereal at my house, but I don’t buy it too often, because of the price and the high sugar content. Because let’s face it, cereal that is low in sugar tastes like cardboard.

But Kellogg’s cereal was on sale for $1.49 if you bought 4 boxes and I had a $1 coupon, so I bought 4 for a treat and a change, because we’ve been eating a lot of eggs lately.

Lunches and snacks included ham & cheese sandwiches, leftovers, apples, oranges, pretzels, and homemade Rice Krispie treats.

    I’m so sorry your kids weren’t feeling well. I sure hope they are better. I’ve been sick all week, so I can relate. 🙁 A cooking break is definitely nice, though. We had ‘snacky’ dinner the other night because I wasn’t up to cooking.

    LOVE finding leftovers in the freezer that I can just reheat and eat.

    Sounds like you had a fun celebration! It’s important to break out of the box and reward our kids for their efforts. You’re making great memories!

    Completely agree with you on the cereal. I stock up, too, when I find it for a great price. It’s wonderful when mom isn’t feeling well.

    Your turkey burgers sound SO good! No new recipes for us this week. I’ve been keeping it simple just to keep the family fed while I get better.
