This Week’s Dinners:
Saturday: We spent the afternoon at the PA Farm Show in Harrisburg and dined at the show. We’re not farmers, but the Farm Show is a yearly attraction that we do NOT miss. It is the largest indoor agricultural show in the nation that features 6000 animals, competitions, exhibits, vendors, and a 1000 pound, life-sized butter sculpture.
Sunday: After church we went out to lunch with my parents to a local sub/sandwich shop. We had leftovers for dinner.
Monday: Meatball sandwiches, steamed broccoli & peas, homemade applesauce.
I keep a large bag of frozen meatballs that I find at BJ’s in the freezer for busy nights. I just heat up the amount that we need with some marinara sauce and serve–easy, peasy.
Tuesday: Easy Lasagna, garlic bread that I made myself from a store-bought loaf of Italian bread that was marked down to 99 cents, steamed broccoli & peas.
A big pan of lasagna means yummy leftovers for lunch!
Wednesday: My oldest daughter asked for breakfast for dinner, so we had eggs, sausage, toast and grapes. I love breakfast for dinner.
Thursday: Pasta e Fagioli soup, homemade artisan bread, and homemade applesauce.
Friday: A much needed date night with my husband.
The kids are going to their grandparents for the night and my husband and I are going out to dinner. We have some gift cards to use that we received at Christmas.
This Week’s Breakfasts, Lunches and Snacks:
For breakfast, we ate cereal that I bought last week during a stock up sale. Also my husband made green smoothies for the two of us. The green smoothies contain: spinach, celery, cucumbers, apples, lemon, and fresh ginger.
Lunches & snacks included: leftovers, pb & j sandwiches, ravioli, applesauce, oranges, pretzels, tortilla chips. For the kids lunches, I buy frozen ravioli and cook it in the morning. I put it in their thermos with some marinara sauce and it stays warm until lunch.
