This Week’s Dinners:
Saturday: Ham loaf, cheesy broccoli rice baked potatoes, homemade sugar-free applesauce.
Have you heard of ham loaf? It might be a central PA thing, but we LOVE it. I buy the loaf at a farmer’s market. It is already prepared, but I need to bake it.
Sunday: My oldest daughter had a swim meet all afternoon, so my husband treated us to dinner at our favorite deli.
Monday: Tacos. I browned 2 lbs of turkey and used my homemade taco seasoning. We used iceburg lettuce instead of tortillas. My plan was to put half of the seasoned taco meat in the freezer, but the kids liked the tacos so much that ate them throughout the week for their afternoon snacks.
Tuesday: Slow Cooker Asian Orange Chicken, rice and steamed broccoli.
The chicken was in the freezer and part of my freezer cooking session that I did in the fall. It’s so nice to have meals ready to go in the freezer.
Wednesday: Burrito Bowls–my daughters request. I thought I would use leftover chicken from Tuesday, but we didn’t have enough, so I bought a rotisserie chicken for the meal.
Thursday: Burrito Bowls…again. It really is our favorite meal!
Friday: Homemade Pizza, carrots & hummus and apple slices.
This Week’s Breakfasts, Lunches & Snack:
Breakfasts included cereal, eggs & toast and green smoothies (for me and hubby). Lunches included leftover tacos, pb & j sandwiches and soup that was in the cupboard.
Snacks: Apples, oranges, pretzels, yogurt sticks, cheese sticks, carrots & hummus. And I treated my kids to a package of Oreos that was on sale this week and for 3 whole days they thought I ROCKED!
