This Week’s Dinners

Saturday: I made a double batch of Ham & Bean Soup using Ham Hocks. If you’ve never heard of ham hocks, neither did I until my mom bought them for me at a farmer’s market. They make the BEST soup.

Sunday: Leftover ham & bean soup, homemade applesauce. There was about 2 quarts of soup left over that I froze for another.

Monday: Chicken Broccoli Alfredo from Damn Delicious. And it was darn delicious!

Tuesday: Roasted pork chops, potatoes, and green beans and homemade applesauce. I got the idea from last month’s Rachael Ray magazine. It’s super easy and we really enjoyed it. Use a rimmed baking sheet,  add potatoes and green beans that you coated with olive oil and seasoning salt. Lay 4 pork chops (also coated with olive oil and your favorite spices) on top of the veggies. Roast at 475 for 20-25 minutes or until the pork chops are done.

Wednesday: Slow Cooker Chicken, Black Bean & Corn Tacos. This is very easy to throw together in the morning. It also makes a great freezer meal.

Thursday: Taco leftovers. My family gets a little testy on leftover night, but I don’t want to throw out any food, so they’ll have to deal with it.

Friday: My daughters are working a Girl Scout cookie booth at the mall, so for a special treat, we’re eating at the mall’s food court. Guess who is the best mom ever? That would be me—at least for today.

This Week’s Breakfasts, Lunches & Snacks

This week, we ate eggs, toast, oatmeal, and green smoothies for breakfast. Lunches and snacks included sandwiches, apples, oranges, pretzels, tortilla chips & salsa.

    I just made my first Ham & Bean Soup this week using a ham hock. We didn’t actually eat it though. Instead it went to the freezer to save for our church potluck next Sunday. I can’t wait to try it – it smelled delicious.

    I really need to try that Chicken Taco Slow cooker recipe. Love Mexican & slow cooker recipes, so thanks for sharing.
