Every Friday, I share what we ate for the week on our budget. Currently our monthly budget for my family of four is $500. I also share any money-saving tips and tricks that I learned from the week.
This Week’s Dinners:
Saturday: Our girls had a Girl Scout sleepover, so my husband and I had a date night. We went out to dinner to our favorite seafood restaurant with a gift card that we received for Christmas in 2013! I’m not sure what took us so long.
Sunday: Freezer leftovers. I’ve become more diligent about putting uneaten leftovers in the freezer. So my family had a choice of ham & bean soup, white chicken chili, or chicken & black bean tacos. They chose the ham & bean soup.
Monday: Chicken, Black Bean & Sweet Potato Quesadillas. I used cooked chicken that I had in the freezer.
Tuesday: Meatball sandwiches, Hasselback Potatoes, broccoli. I buy a big bag of turkey meatballs at BJ’s warehouse to keep in the freezer for a quick dinner.
Wednesday: My oldest daughter requested a Tomato soup & Grilled Cheese night, so I went to Pinterest for a recipe. I made this very easy Creamy Tomato Basil Soup from The Pinning Mama. It was really good and I topped it with my own Cheap, (but Tasty) Croutons.
Thursday: I had leftover soup and I made tortellini with sauce for the kids. My hubby had a late dinner meeting.
Friday: Tonight, I’m making the simple, one pan dinner: Roasted Pork Chops, Potatoes & Green Beans.
This Week’s Breakfasts, Lunches & Snacks:
When I went shopping on Monday, I found breakfast maple sausage marked down to $1.84 a package, so I bought 3 packs and then browned all three packs. I stored in the refrigerator and we just heated them up in the morning. My family loves sausage and I don’t buy it too often, so it was a treat.
For breakfast, we ate eggs, sausage & toast, oatmeal, and green smoothies. Lunches and snacks included leftovers, turkey & cheese sandwiches, pb & j sandwiches, apples, oranges, tortilla chips & salsa.
