What We Ate This Week on our Budget 04.03.15

Every Friday, I share what we ate for the week on our budget. Currently our monthly budget is $500 for my family of 4.

This Week’s Dinners:

Saturday: Our daughters made dinner (with my assistance) on Saturday night and performed some dinner theater to entertain me and my husband. They made spaghetti, garden salad, and fruit salad.

Sunday: I am becoming better at putting leftovers in the freezer if we are not going to eat them in time before they go bad. It is so nice to have options in the freezer for nights that I just don’t feel like cooking. I heated up Chicken Tortilla soup that was in the freezer from last month and I grilled sausages with Pepper and Onion hobo packs.

Monday: Turkey Tacos. I browned 2 pounds of ground turkey, added my homemade taco seasoning, 2/3 cup water, and a can of drained and rinsed black beans. We layered the meat, lettuce, tomatoes, avocado, salsa, and cheese on top of Ortega’s Fiesta Flats. We also ate strawberries. I LOVE taco night.

Tuesday: Lemony Asparagus Pasta

Wednesday: I used leftover taco meat from Monday night to make Burrito Bowls.

Thursday: I grilled sausages (again) and serving with steamed broccoli and homemade sugar-free applesauce.

Friday: I have had a gift card for Cheesecake Factory for about 5 years and we’re finally going to use it. Yay! There isn’t one near our house, but the kids are off school so we’re taking a road trip to King of Prussia to shop at the Ikea, and we’ll go to the CF at the mall.

This Week’s Breakfasts, Lunches, and Snacks:

For breakfast, we ate Banana Walnut Baked Oatmeal, eggs & toast, yogurt and green smoothies. Lunches were pb & j sandwiches, leftover tacos and pasta. My oldest daughter likes to take tortellini to school for lunch, so I heat up frozen tortellini in the morning and store it in her thermos. Snacks were apples, tortilla chips & salsa and cheese & crackers.
