Every Friday, I share what we ate for the week on our budget. Currently our monthly budget is $500 for my family of 4.
This week, due to meal planning burn out and maybe a bit of laziness, I did very little shopping and instead planned many of our meals from what I could find in the freezer. I am getting better at putting leftovers in the freezer if we don’t eat them before they go bad. They come in handy–my family gets fed and I get a little break from cooking.
This Week’s Dinners:
Saturday: We had my parents and grandmother over for dinner and I made Pioneer Women’s Chicken Parmigiana, garden salad, steamed broccoli, and my tasty (but cheap) garlic bread.
Sunday: We went to my daughter’s end of season swim team banquet.
Monday: Roasted chicken breast, Hasselback sweet potatoes, steamed broccoli. This was the first time that I made sweet potatoes this way and I don’t know if I’ll make them any other way again.
Tuesday: I made a ham & pepper skillet frittata with leftover Easter ham and chopped peppers that I had in the freezer. I served with fruit and toast
Wednesday: I pulled leftover Cajun Sausage and Red Beans out of the freezer and served over rice.
Thursday: I had leftover cooked chicken in the freezer and used it to make chicken, sweet potato & black bean quesadillas.
Friday: I’m buying a rotisserie chicken from Costco and making Burrito Bowls.
This Week’s Breakfasts, Lunches, and Snacks:
For breakfast this week, we ate eggs, sausage & toast, cereal, and hot oatmeal. For lunches and snacks, we ate leftovers, pb & j sandwiches, apples, oranges, tortilla chips and salsa.
