Every Friday, I share what we ate for the week on our budget. Currently our monthly budget is $500 for my family of 4.
This week, I made one of my favorite Cook Once, Eat Twice meals: Roasted Pork Tenderloin. It is my favorite cut of pork. It’s a little more expensive per pound, but we’re getting bored with chicken and it was on sale this week.
This Week’s Dinners:
Saturday: Leftover Burrito Bowls from Friday’s dinner.
Sunday: We grilled turkey burgers that I found marked down. Our sides were various things we found in the fridge: leftover steamed broccoli, applesauce, grapes.
Monday: I made Chicken Noodle Soup with leftover chicken from the Costco rotisserie chicken. I also made chicken stock using my slow cooker method.
Tuesday: Cook Once, Eat Twice – Roasted Pork Tenderloin , Hasselback Sweet Potatoes, steamed broccoli, applesauce. I roasted the pork and the sweet potatoes on the same baking sheet for easier clean up.
Wednesday: We made wraps from Tuesday night’s pork tenderloin, leftover sweet potatoes and broccoli.
Thursday: Busy night, so I made spaghetti.
Friday: This mama is going away for the weekend with my college friends, so daddy’s in charge.
This Week’s Breakfasts, Lunches & Snacks:
Breakfast was eggs & toast, cereal, green smoothies. Lunches and snacks included turkey or ham and cheese sandwiches, apples, oranges, grapes, yogurt sticks, cheese sticks, tortilla chips & salsa.
