It’s been a busy couple of weeks and I wasn’t able to pull this together the last two Fridays, but I’m getting back on track. This series helps me stay on top of our grocery spending and currently our monthly budget is $500 for my family of 4.
This Week’s Dinners:
Saturday: We traveled to Corning, NY to visit the Corning Museum of Glass with my kids’ Girl Scout troop. I’ll write about the trip in a few weeks. We packed our lunch, and ate dinner with the troop at the hotel. We dined on pizza, carrots and dip, and Girl Scout cookies for dessert.
Sunday: We woke up in Corning and drove up to Niagara Falls, NY. We were treated by the beautiful weather and amazing attractions and I’ll write about this trip too. We ate breakfast at the hotel in Corning, and we had dinner on the patio of the Top of the Falls restaurant. After dinner, we watched the fireworks over the American falls. It was a perfect ending to a perfect day.
Monday: Sadly, all trips must come to an end and we spent several hours on Memorial Day traveling home. We ate lunch and dinner on the road.
Tuesday: Grilled sausages, steamed broccoli, watermelon
Wednesday: Busy night with swim team practice for both girls, so I made Pulled BBQ chicken sandwiches, corn on the cob and watermelon. I heated up cooked chicken that I had in the freezer and just added some store bought sauce. When I have more time for dinner prep, I like to make my own BBQ sauce.
Thursday: Another busy night, so I made Burrito Bowls with leftover cooked chicken and taco meat that I had in the freezer.
Friday: We’re going out for pizza.
This Week’s Breakfasts, Lunches & Snacks:
Breakfast was eggs & toast and cereal. Lunches and snacks included ham and cheese sandwiches, pb & j sandwiches, apples, yogurt sticks, cheese sticks, tortilla chips & salsa.
