I am pleased with this week’s menu. I was getting into a rut and that is why I haven’t been posting this series for the last several weeks. To save time, I was planning the same dinners over and over… and over and over. We were bored and my family was revolting. So I pulled out some recipes that I haven’t made in ages and I found a new recipe on Pinterest.
All is well in my kitchen again.
This Week’s Dinners:
Monday: Pasta e Fagoili soup and cheap, yet tasty homemade garlic bread.
Tuesday: Cook Once, Eat Twice night. Pesto Ranch Crock-Pot Chicken Thighs, rice, roasted asparagus. My family went crazy over this meal. It was really delicious.
Wednesday: Leftovers from Tuesday night.
Thursday: Homemade Clam Chowder and cheap, yet tasty garlic bread. This soup recipe is really easy and only takes about 30 minutes to make.
Friday: Tonight, I’m making homemade pizza with apple slices on the side.
This Week’s Breakfasts, Lunches, and Snacks:
Breakfasts included eggs & toast and cereal. Lunches included leftover soup, leftover chicken, black bean & corn tacos from last week, and pb & j sandwiches. Snacks included popcorn, apples, oranges, tortilla chips & salsa.


I laughed at the comment about your family revolting! It is SO easy to get in a rut with tried and true, quick-to-make recipes. I find too that posting our menu helps keep me a bit more creative too. And I want to try that crock-pot chicken recipe! Looks like something we would love. Your easy garlic bread sounds yummy too!
