This week, I pulled two recipes out of my box that I haven’t cooked in a long time. For the past several months, I’ve been cooking the same thing over and over and over. That’s one reason why I stopped the What We Ate series, because quite frankly it was getting boring. But I’m trying to mix it up a little at dinner time, but still keep dinner time prep quick, easy, and tasty.
This Week’s Dinners:
Saturday: Close family friends took my daughters to Hersheypark for the afternoon. My husband and I met them for dinner at a local pub.
Sunday: My kids were at a team building party for their swim team. My husband helps coach and there was so much pizza left over that he came home with a whole pizza, so that’s what we had for dinner.
Monday: At least once a week, my husband has a late night and isn’t home for dinner. That night has become spaghetti night for us. My husband doesn’t care for tomato based spaghetti sauce and my daughters and I LOVE it. It’s also the EASIEST meal to pull off on a busy week. I brown ground meat, pour a jar of tomato sauce over the meat, add the sauce to cooked pasta and call it a night. I usually add a side of steamed vegetables and cheap, but tasty homemade garlic bread.
Tuesday: Turkey Veggie Sloppy Joes, french fries, steamed broccoli.
Wednesday: Our 15 year wedding anniversary. My husband and I will go out at another time, so I made one of my favorite pasta dishes to celebrate 15 years of wedded bliss. Turkey Sausage, Sun-Dried Tomato, and Arugula Pasta is really easy to make, but it is not your ordinary pasta dish. The sun-dried tomato sauce is divine. I served with Cheap, but Tasty Garlic bread, and steamed veg.
Thursday: The last Thursday of October is always trick or treat night in our neighborhood, so I served up some tasty pasta and sloppy joe leftovers.
Friday: It’s pizza night. We are hosting 5 other 4th graders for a sleepover to celebrate my oldest daughter’s tenth birthday. Fun times. My double digit midget requested pizza from a local shop.
This Week’s Breakfasts, Lunches, and Snacks:
Breakfast this week was eggs & toast and Blueberry & Pecan Baked Oatmeal. To save time, I made the oatmeal on Sunday night and it fed all for of us for two mornings. Lunches and snacks included chicken noodle soup, pb & j sandwiches, oranges, peaches, pretzels, cheese sticks and yogurt sticks.
