How I Saved this Week:
1. I stumbled on a stellar meat deal this week. Giant of PA offered $4 off meat if you bought 4 participating products. (See below picture.) The best part was that there wasn’t a minimum purchase on the meat. I bought some pasta sauce and salad dressing to get the meat discount and I was delighted to find 2 packs of chicken thighs marked down. You’ll see this week that we ate out quite a bit–too much. But we had a lot to celebrate this week, both my husband and my mother celebrated their birthdays and my daughters hosted some friends for a sleepover. This Week’s Dinners:
Saturday: We went to a Hibachi restaurant and used a coupon. It was still a pricey meal, but we did come home with leftovers.
Sunday: After church we went to lunch with my extended family to celebrate my mom’s birthday. We didn’t have any coupons, but the lunch prices are much cheaper than dinners and we had some leftovers to eat at dinner time, along with our leftovers from Saturday night
Monday: Dinner was supposed to be Grilled Sausages with Pepper & Onion Hobo Packs, Acorn Squash Bowls, and salad. Last week I found two packs of sausages marked down to $1.50 each at Giant and I also had a coupon for $1.50/2 for this particular brand, so I was pretty excited to get two packs for 75 each. BUT I completely forgot about the sausages after I put them on the grill and burned them to a crisp. Not very frugal of me. I still made the acorn squash, but heated some frozen ravioli also. I didn’t have any other meat thawed.
Tuesday: Slow Cooker Chicken Fajitas and fruit. Someday I will post a recipe, but this dinner couldn’t be easier. Place 1 sliced red pepper, 1 sliced red onion, 1 – 1.5 lbs of chicken, juice of one lime and fajita seasoning to the slow cooker and cook on low for about 6 hours or until chicken is cooked through. Pull out the chicken and slice, put back in the slow cooker and stir everything up really well. Serve with tortillas, cheese, avocado, sour cream, lettuce, tomatoes, salsa. Yummy! You can use store bought fajita packs or make homemade fajita seasoning.
Wednesday: Spaghetti with steamed veg and mandarin oranges as sides. My husband has a late night usually every Wednesdays, so I have declared it Spaghetti night since he doesn’t like spaghetti and the rest of us do. (Not sure where he came from! Who doesn’t like spaghetti?)
Thursday: One Pan Roasted Chicken, Sweet Potatoes, and Carrots.
Friday: My girls are having two friends for a sleepover. We ordering pizza.
This Week’s Breakfasts, Lunches & Snacks:
For breakfast, we had cereal with bananas, eggs & toast, greens smoothies. Lunches and snacks included soup, leftovers, apples, oranges, yogurt sticks, cheese sticks, tortilla chips, and we still have Halloween candy.
