Every week, I share how I saved and what we ate for the week on our budget. Our current monthly budget for my family of 4 is $500.
When I made my menu and shopping list last Friday, turkey was NOT on the list. But when I stumbled onto a very marked down whole turkey at Giant, I changed my plan. At .63/lb, I couldn’t pass up the price. I roasted it immediately and used the meat of it for this week’s meals. I also made a bone stock and froze 2 (2 cup) portions of chopped meat to use later. After feasting on turkey the week after Thanksgiving too, it’s safe to say that we’re a little tired of it.
This Week’s Dinner:
Saturday: Turkey & Waffles and a steamed vegetable.
Sunday: We went out for a large lunch after church and just had leftovers for dinner.
Monday: Turkey Noodle Soup, grilled cheese sandwiches, apple slices.
Tuesday: My husband and I had burrito bowls with the turkey and the girls ate the last of the Turkey & Waffles.
Wednesday: Spinach Lasagna Roll-ups. I used the same recipe as my Easy Lasagna Recipe, but added a 10 oz box of thawed frozen chopped spinach and the regular lasagna noodles.
Thursday: Turkey White Bean Chili. I used my recipe for Red & White Chicken Chili, but used cooked turkey and turkey stock.
Friday: Leftover.
This Week’s Breakfasts, Lunches, and Snacks:
Breakfasts were eggs & toast, peanut butter & banana toast, oatmeal. Lunches and snacks included turkey sandwiches, leftovers, chicken nuggets, apples, oranges, pretzels, cheese and yogurt sticks.
