This Week’s Dinners:
Saturday: #Blizzard2016 hit the east coast and we got about 30 inches of snow. Since I was stuck at home, I made my Ham Hock & Bean soup that needs to simmer for a few hours. I had a ham hock in the freezer and I don’t always have time for this soup, but as you can see below we weren’t going anywhere.
I also made skillet cornbread. I used the recipe on the cornmeal bag and I baked in my cast iron skillet. It was a cozy meal for a crazy day.
Sunday: We were still snowed in, and thankfully, we had plenty of food. We noshed all day and didn’t have a true sit down dinner. We ate leftover ham & bean soup, kielbasa, and whatever we felt like eating.
Monday: Slow Cooker Chicken & Black Bean Tacos
Tuesday: I made Burrito Bowls using leftovers from Monday night.
Wednesday: This was by far my favorite meal of the week: Roasted Pork Tenderloin, brussel sprouts, and homemade applesauce.
I roasted the brussel sprouts on the same pan with the pork and they turned out fantastic. My husband requested brussel sprouts a few weeks ago and I’ve had them on our menu once a week ever since. The first time I bought them I found them in the produce section and they were a bit pricey, but it was a specific request from my husband. Last week, I found them in the freezer section and I believe the price was better.
Pork tenderloin is a pricier cut of pork, but our favorite, so I buy it occasionally when it is on sale. The sale price was $2.77 pound, but it comes with two tenderloins and for the price I paid above, I got two meals out of it.
Thursday: Pork tenderloin wraps with leftovers from Wednesday night. The wraps were stuffed with the meat, avocado, salsa, and a sprinkle of cheese. I was out of greens or I would have added that too. We also had homemade applesauce.
Friday: Homemade Easy Lasagna
This Week’s Breakfasts, Lunches, and Snacks:
For breakfast we ate eggs & toast and cereal. Lunches and snacks included chicken nuggets for the kids, leftovers for me, apples, oranges, pretzels, yogurt sticks, cheese sticks, and tortilla chips. I bought a big bag of frozen chicken nuggets at BJ’s for the kids lunches. I heat up in the toaster oven in the morning and put in a thermos. The kids are getting bored with sandwiches.
