What We Ate this Week on our Budget

Every week, I share how I saved and what we ate for the week on our budget. Our current monthly budget for my family of 4 is $500.

Last Saturday, I made a trip to an apple orchard to get enough apples to make my Sugar-Free Homemade Applesauce to last us through the rest of winter. It’s always a major project, but I’m so grateful afterwards to have a stocked freezer. I serve the applesauce as a side for many meals and use it in baking.

This Week’s Dinners:

Saturday: I made homemade meatballs for the first time using a random recipe I found on Pinterest. The recipe called for 2 pounds of beef, but I used 1 pound ground beef and a pound of Italian sausages that I found marked down. The meat balls were delicious. I served with spaghetti, garden salad, and Cheap, but Tasty garlic bread.

Sunday: The meatballs I made on Saturday night was enough to for two meals.

Monday:  My husband requested brussel sprouts, so I made Roasted pork chops, potatoes, and brussel sprouts and homemade applesauce.

Tuesday: I found some al fresco already cooked sausage marked down and checked the website for some ideas on what to do with it. I decided to make Southwest Style Roasted Garlic Chicken Sausage, Rice, & Beans. I served with homemade applesauce.

Wednesday: Pasta with clams and fresh tomatoes. I served with steamed broccoli and homemade applesauce. I used grape tomatoes that were in the freezer from my garden.

Thursday: Leftovers

Friday: My husband and I are going to dinner with some friends and my kids are going to their grandparents.

This Week’s Breakfasts, Lunches, and Snacks:

For breakfast we ate eggs, cheese, and English muffin sandwiches, cereal, and peanut butter & banana toast. Lunches and snacks included chicken noodle soup, ham & cheese sandwiches, pb & j sandwiches, apples, oranges, pretzels, yogurt sticks, cheese sticks, and tortilla chips.

    Years ago I found a recipe for vegetable meatballs…not what youre thinking. You juliene zuchs and carrots yellow squash and potatoes and mix with your ground beef. Great way to trick your child that won’t eat veg! This became one of my daughter’s favorites for a long time. Now I just make the meatballs with some season and cook and put in the crock with ketchup, brown sugar and Jack Daniels and keep on warm for 4 hours.
