This Week’s Dinners:
Saturday: We went out to dinner with friends.
Sunday: leftover lasagna (from Friday night), garden salad, and cheap, but tasty garlic homemade
Monday: Roasted Fish with Tomatoes & Olives, steamed broccoli, homemade applesauce. This was my favorite dinner of the week. This link will take you to a Tilapia recipe, but you can make it with any fish. I bought another type of white fish that was on sale, but I don’t remember what kind. It was either haddock, flounder, or cod. But I can tell you it was labeled wild-caught and it was NOT tilapia. One of our daughters has had reactions to tilapia, so I stopped buying it. And we watched a not very nice segment about tilapia on 60 Minutes and I will never buy nor eat it again.
Tuesday: Salsa Chicken Casserole, homemade applesauce, salad. I found this recipe when I was searching for ideas for my 20 Rice & Beans Recipes post. This was super easy to make and we all enjoyed it.
Friday: We’re going out to dinner with some friends to a local favorite diner.
We didn’t intend to go out to eat twice in one week, but both times where for special occasions and the restaurants were inexpensive.
This Week’s Breakfasts, Lunches, and Snacks:
For breakfast we ate eggs & toast and cereal. Lunches and snacks included ravioli for the kids, leftovers for me, apples, oranges, pretzels, yogurt sticks, cheese sticks, and tortilla chips. I bought a big bag of frozen ravioli. On school mornings, I cooked it and added some sauce and packed it in their thermos’.
