Every week I share what we ate for the week on our budget. Our current monthly grocery budget for my family of 4 is $500.
This Week’s Dinners:
Saturday & Sunday: My kids had swim meets on both days. This means we spent our entire weekend at a pool. It’s fun to cheer on my kids and they both had really good swims, but it makes for an exhausting weekend. I packed food for breakfast and lunches, but we did go out to dinner on both nights…did I mention we spent the entire weekend at a pool…restaurant budget blown!
Monday: I made a new recipe, One Pan Lime Chicken & Rice with Black Beans from my 20 Frugal & Tasty Beans & Rice list. I adapted slightly, because I didn’t have cilantro and chilies and I used my homemade taco seasoning for flavoring. It was a hit and tastes like a homemade version of boxed rice mixes. I ate the leftovers for lunch with tortilla chips.
Tuesday: Slow Cooker Pesto Chicken, Hasselback potatoes, steamed broccoli, homemade applesauce.
Wednesday: Spaghetti night.
Thursday: It was a beautiful sunny day, so I grilled some burgers that were in my freezer and made oven fries and steamed veggie as sides.
Friday: I found a bag of potstickers from BJ’s in the back of my freezer, so I’m going to use them in a soup. I’ll use my easy chicken noodle soup recipe as a guide, but use the potstickers instead of the noodles. I’ll let you know how the soup turns out.
This Week’s Breakfasts, Lunches, and Snacks:
For breakfast we ate eggs, ham & cheese bagel sandwiches, and cereal. Lunches and snacks included ham & cheese sandwiches or chicken nuggets for the kids, leftovers for me, apples, oranges, pretzels, yogurt sticks, cheese sticks, and tortilla chips.
