Every week I share what we ate on our budget. Currently, our monthly budget for my family of 4 is $500.
This Week’s Dinners:
Saturday: Cheese burgers, fries, steamed broccoli, and homemade applesauce. Enough snow had melted and I was able to get to our grill…and as I type this I realize that I never put the grill cover back on…and more snow has fallen…argh!
The turkey burgers were marked down and the fries were frozen. I like to keep a bag of frozen french fries on hand for quick grill dinners.
Sunday: Super Bowl Sunday, aka, an excuse to feast like gluttons. We had chicken wings, turkey nachos, guacamole, cheese and crackers, and cookie sundaes. I don’t have a recipe for nachos on the blog, but they’re so easy to make. I browned meat, using my homemade taco seasoning and layered chips, meat, cheese, chopped onions, and tomatoes on a large rimmed baking sheet. Bake at 350 until the cheese is melted. I served with avocados and salsa.
Monday: Homemade Turkey Noodle soup and garden salad. I still had chopped cooked turkey and homemade stock leftovers in the freezer from Thanksgiving. This is such an easy dinner and tasted so good this week as the arctic temps were hitting us.
Tuesday: Parmesan Chicken Tenders, garden salad, steamed broccoli, and applesauce.
Wednesday: Turkey Cornbread Potpie, garden salad, applesauce.
Thursday: Leftover night from Monday and Wednesday nights dinners.
Friday: I’m going to Costco today for my monthly trip, so I’m picking up a rotisserie chicken, so I decided on Homemade Burrito Bowls tonight. My most favorite dinner!
This Week’s Breakfasts, Lunches, and Snacks:
For breakfast we ate eggs & toast and cereal. Lunches and snacks included ham & cheese sandwiches for the kids, leftovers for me, apples, oranges, pretzels, yogurt sticks, cheese sticks, and tortilla chips.
