What We Ate this Week on our Budget

This Week’s Dinners:

Saturday: Easy Lasagna, garden salad, bread.

Sunday: Leftover lasagna from Saturday.

Monday: Meatloaf, smashed potatoes, summer corn, and cantaloupe. I had the meatloaf in the freezer from a few weeks ago. I love prep once, cook twice meals.

Tuesday: Easy Sausage Skillet. I found this recipe as I was flipping through a magazine and I had some sausage in the freezer. It was tasty.

Wednesday: I used the last of the leftover turkey and stock that I saved from Thanksgiving and made Turkey Orzo Soup.

Thursday: Much to my family’s dismay, it’s leftover night. One daughter declared, “I hate leftover night!” Suck it up, buttercup, we’re not going to waste the food!

Friday: It’s going to be a gorgeous day, so I’m going to grill sausages and hobo packs and have fries, steamed broccoli, and fruit as sides.

This Week’s Breakfasts, Lunches, & Snacks:

Breakfast this week included egg & bagel sandwiches and cereal. Lunches and snacks included sandwiches, leftover soup, apples, oranges, yogurt sticks, cheese sticks, air-popped popcorn, and Girl Scout cookies. ๐Ÿ˜‰

    How do you freeze your meatloaf? Do you prepare it and freeze or do you prepare and cook and freeze?

      I prepared the meatloaf and shaped it into a loaf. I stored it raw in a freezer bag. When I wanted to use it, I pulled it out of freezer and thawed in refrigerator and I baked it following the recipe. It was only in my freezer for two weeks. I think I might also wrap in foil if I were to store for extended period in freezer to avoid freezer burn, but it turned out fine.
