Every week I share what we ate for the week on our budget. Our current monthly budget is $500 for my family of 4.
Sweet potatoes were on sale for .79/lb this week and asparagus was $1.49/lb, so we ate them twice this week. Take advantage of the low prices for the Easter holiday and stock up on these side dish staples.
This Week’s Dinners:
Saturday: We were in Penn State for my daughter’s swim meet. We had dinner with the team after the meet.
Sunday: We were exhausted from a busy Friday and Saturday away, so I baked a frozen pizza and had fruit on the side.
Monday: Roasted Pork Tenderloin, sweet potatoes, asparagus. Pork tenderloin in one of my favorite cuts of meat and my favorite Cook Once, Eat Twice meals. It is a bit more expensive, usually around $2.99/lb, but the 2+lb package has 2 tenderloins, so I roast both at once. I served one for dinner Monday night and used the other for Tuesday night’s dinner.
Tuesday: Pork Tenderloin wraps with romaine, avocado, cheese, salsa. I served with tator tots and fruit.
Wednesday: One Pan Roasted chicken thighs and sweet potatoes, steamed broccoli.
Thursday: I bought a huge 5lb bag of turkey meatballs at BJs last week to have on hand for quick meals. They’re already cooked, so I just add some marinara sauce and made sandwiches. I also served french fries and roasted asparagus.
Friday: I have some ham hocks in the freezer, so I’m going to make Ham & Bean Soup.
This Week’s Breakfasts, Lunches, and Snacks:
For breakfast, we ate cereal, eggs & toast, and Banana Walnut Baked Oatmeal. For lunches and snacks, we ate ham & cheese sandwiches, apples, oranges, cheese & crackers, yogurt sticks, cheese sticks, and popcorn.
