I’ve recently re-started the series, What We Ate this Week on our Budget, because I missed the accountability and I had several readers ask for its return. Our monthly grocery budget for my family of 4 is $500. It’s a tight budget and I failed miserably over the summer, but we have lots of financial goals, so I need to get it back in line.
This Week in the Kitchen:
Our week nights have gotten so hectic with my kids having different practice times. To make dinner hour easier, I’m trying to make a double or triple batch of at least one dinner each week to keep in the freezer. This week, I bought a 3 lb. package of ground turkey and made my Turkey & Black Bean Taco Meat. I served it one night for dinner and filled two Glad freezer containers with the rest. Now I don’t have to worry about Taco Tuesdays at least for 2 nights.
This Week’s Dinners:
Sunday: My husband treated us to a dinner at our favorite wing place.
Monday: Hubby had a late meeting, so it was Spaghetti Night! My husband is not a big fan, so I plan this easy dinner at least once a week or every other week. I served with garden salad for me, steamed veggies for the kids.
Tuesday: Taco Tuesday!! Also, read: 30 Taco Tuesday Recipes
- Turkey & Black Bean Tacos
- Homemade Applesauce
- Garden Salad
Wednesday:
- Tortellini & Spinach Soup
- Garden Salad
- Homemade Applesauce
Thursday:
- Crispy Parmesan Chicken Tenders
- Hasselback Potatoes
- steamed veggies and/or garden salad
Friday: My youngest daughter’s elementary school is having a back-to-school potluck picnic. I was assigned chips and salsa.
Saturday: We are going to an All-You-Can-Eat Spaghetti fundraiser. As I’m typing this, I’m realizing that we had 2 spaghetti nights this week…oops, no complaints from me! 😉
This week’s breakfasts, lunches, and snacks:
Breakfasts included hard-boiled eggs, cereal, yogurt, and fruit. Lunches included sandwiches, pasta, chicken nuggets, soups, apples, pretzels, and yogurt sticks.
