Fiesta Black Beans & Rice
 
Ingredients
  • 1 Tbsp olive oil
  • ½ small red onion, chopped
  • 2 garlic cloves, minced
  • 1 sweet pepper, chopped. You can use any color sweet pepper
  • 1 cup uncooked (non-instant) white rice
  • 1¼ cup water
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1 ½ cup cooked beans OR 1 (15 oz) can black beans, drained and rinsed (How to Cook Dried Beans)
  • 1 (15 oz) can diced tomatoes
  • ¾ cup frozen corn
Instructions
  1. In a large skillet, heat the olive oil over medium heat. Add the onion, garlic, and pepper and cook until soft, about 4 minutes.
  2. Add the rice and cook for 1-2 minutes, stirring constantly, so as not to burn.
  3. Add the water, spices, beans, corn, and tomatoes. Bring to a boil. Reduce to a simmer, cover, and cook for 15 minutes or until rice is cooked through.
