Cheesy Broccoli Twice Baked Potatoes
  • 4 large potatoes
  • 2 cups chopped broccoli,
  • ½ cup sour cream
  • shredded cheddar cheese
  • salt & pepper
  1. Pre-heat oven to 400 degrees.
  2. Scrub the potatoes to remove any dirt and dry.
  3. Pierce potatoes a few times with a fork. Place directly on oven rack and bake until cooked through, about 50 minutes.
  4. In the last 10 minutes that the potatoes are baking, steam the broccoli--either in the microwave or stove top.
  5. Carefully remove potatoes and allow to cool slightly so that you can handle them. Keep the oven on.
  6. Cut the potatoes in half lengthwise. Scoop out the flesh. Place the skins in a shallow baking dish.
  7. In a large bowl, mash the potatoes and the sour cream. Stir in the steamed broccoli.
  8. Add salt & pepper to taste.
  9. Spoon the mixture back into the potatoes.
  10. Sprinkle liberally with your favorite cheddar cheese.
  11. Bake for 20 minutes.
