Every Friday, I share what we ate for the week on our budget. Currently our monthly budget for my family of four is $500.
This Week’s Dinners:
Saturday: We were at a swim meet for most of the day, so it was leftover night.
Sunday: Day 2 of the swim meet and my sweet mother made lasagna for us for dinner.
Tuesday: Roasted Pork Chops, Potatoes & Green beans.
Wednesday: Slowcooker Asian Orange chicken thighs and drumsticks, rice, broccoli. The chicken was in my freezer and is one of my 8 Freezer Recipes.
Thursday: Snow day! I was planning on making tacos with ground turkey, but when I went to make dinner, I realized that I didn’t have large leaf lettuce to wrap the tacos or any salsa. I had no desire to head out in the snow, so I searched my pantry and found that I had a box of spaghetti and a jar of marinara, so dinner was spaghetti, garden salad, homemade garlic bread.
Friday: The kids are back to school so I’ll head out to get the missing ingredients for our tacos.
This Week’s Breakfasts, Lunches & Snacks:
For breakfast, we ate eggs and toast, oatmeal, peanut butter & banana toast, green smoothies. For lunches and snacks, we ate pb & j sandwiches, turkey & cheese sandwiches, leftovers, apples, oranges, pretzels, tortilla chips & salsa.
