It’s Frugal Friday: A recap of how we frugal-ed our way through the week so that we have more money to put towards our financial goals. Our mission: Live WELL, On LESS Money.

What We Ate this Week:

Monday: Taco boats. I found some taco meat in the freezer and mixed in a can of black beans. We love Ortega Flat bottom taco shells. I bake the boats in the oven.

Tuesday: Cheesy chicken, rice and broccoli casserole, homemade applesauce. I found this recipe from one of those Facebook videos.

Wednesday: Spaghetti night

Thursday: I roasted a chicken to have meat for several meals. I also made homemade chicken stock with the bones. I made my favorite Chicken & Waffles for dinner, and served with a spinach salad and homemade applesauce.

Friday: We went to a fundraising dinner at the high school.

Saturday: Chicken Corn Soup (from Thursday’s roasted chicken), salad, fruit.

How to Save this Week:

Don’t miss the pre-holiday grocery deals. It’s a great time to stock up on turkeys, hams, baking supplies, potatoes, canned goods and so much more. Maybe even pick up a few extra to donate to the local food banks.

Frugal Resources:

Is it your turn to roast the Thanksgiving turkey this year? Does cooking a big bird for so many people intimidate you? It’s going to be okay! I’ve got the answers to the most common turkey questions.
