What We Ate this Week 07.14.18

Here’s what we ate this week on our budget.

I made a huge salad to get us through the week, tried a new recipe that I found on Facebook, and whipped up a batch of Peanut Butter Banana Chocolate Chip Muffins with some ripe bananas that I had on the counter. We also ate a lot of summer fruit and corn on the cob…tis the season.

This Week’s Dinners:

Monday: grilled chicken, pasta salad.

Tuesday: One Pot Cheese Italian Pasta and Chicken. Found this on Facebook. I made one major alteration to the recipe. It calls for sun-dried tomatoes packed in oil and I didn’t have them on hand, so I used a can of diced tomatoes with basil and oregano instead, because that was in my pantry. I’m sure it altered the taste slightly from the original, but my family didn’t know and they enjoyed the dish. I love one pot dinners.

Wednesday: Our summer staple: burgers, corn on the cob, garden salad, and watermelon

Thursday: Takeout pizza, garden salad, watermelon.

Friday: Griled pork tenderloin, garden salad, corn on the cob, cantaloupe. I usually roast pork tenderloin, and this was the first time I grilled it. It was so delicious. It’s a more expensive cut of meat, but truly tender and worth an occasional indulgence, especially when I buy it on sale. I grilled both tenderloins that came in the pack and we ate one tenderloin for dinner.  I’ll use the second one to make wraps for lunches this weekend.

Saturday: We are going to dinner with friends.

Breakfasts, Lunches, and Snacks:


I whipped up a quadruple batch of Banana Peanut Butter Chocolate Chip muffins this week. I LOVE these muffins and they make a great grab-and-go breakfast or snack. Found the recipe on Facebook…of course!

Our lunches included leftovers, sandwiches, Mac & cheese (from a box), fruit, and yogurt.

    Love banana PB chocolate chip anything! I wish my family would all eat the same things. Picky eaters are the worst!
