Cheesy Broccoli Twice Baked Potatoes

Cheesy Broccoli Twice Baked Potatoes

These Cheesy Broccoli Twice Baked Potatoes are so easy to prepare. They are a family favorite and go well with burgers, sloppy joes, pulled pork, and just about everything else!

Cheesy Broccoli Twice Baked Potatoes

Ingredients
  • 4 large potatoes
  • 2 cups chopped broccoli,
  • ½ cup sour cream
  • shredded cheddar cheese
  • salt & pepper
Instructions
  1. Pre-heat oven to 400 degrees.
  2. Scrub the potatoes to remove any dirt and dry.
  3. Pierce potatoes a few times with a fork. Place directly on oven rack and bake until cooked through, about 50 minutes.
  4. In the last 10 minutes that the potatoes are baking, steam the broccoli--either in the microwave or stove top.
  5. Carefully remove potatoes and allow to cool slightly so that you can handle them. Keep the oven on.
  6. Cut the potatoes in half lengthwise. Scoop out the flesh. Place the skins in a shallow baking dish.
  7. In a large bowl, mash the potatoes and the sour cream. Stir in the steamed broccoli.
  8. Add salt & pepper to taste.
  9. Spoon the mixture back into the potatoes.
  10. Sprinkle liberally with your favorite cheddar cheese.
  11. Bake for 20 minutes.

Serve these potatoes with:

  • Red Pepper & Feta Turkey Burgers
  • Portobello Cheese “Steaks”
  • Pulled Pork BBQ in the Slow Cooker

    Kristia, one of my favorite lunches I serve is baked potatoes w/ broccoli, I don’t usually do the twice baked w/ the cheese, but thanks for the reminder to mix it up a bit.

    My family really likes it when I add Buffalo style chicken.

    This seems like a recipe that would be wonderful made ahead of time and then reheated for lunch. Thanks for sharing it! Pinning!
